Banana Jam Stuffer Peanut Butter Cookies
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside..

  2. In the bowl mix together peanut butter and butter until smooth. Add in sugars and mix with and hand mixer for 2 minutes.

  3. Add egg, vanilla, baking soda, and salt and mix for 30 seconds, until combined, scraping the sides of the bowl as necessary.

  4. Turn the mixer to low and add in flour, mixing until just incorporated.

  5. Using a large cookie scoop (3 1/2 tablespoons) portion out the dough. . Make a large well in the cookie dough. Scoop out 3/4 teaspoon of banana jam, and place this into the well of the cookie dough. Form the dough into a ball carefully around the jam, doing your best to seal it in. Repeat the process with remaining dough, and jam.

  6. Place the dough onto the prepared baking sheet 2- inches apart. Bake for 12 minutes, or until the edges are lightly golden and the tops start to crack.

  7. Remove the cookies from the oven. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
